CHE COS’È LA SURGELAZIONE ?
Quando gli alimenti vengono surgelati, la loro temperatura viene fatta scendere rapidamente a -20°C in modo da eliminare i batteri vivi che potrebbero deteriorare il prodotto e renderlo inadatto al consumo. Tale metodo non necessita di un trattamento ad alta temperatura e permette quindi di conservare gli alimenti senza cuocerli. Tuttavia, è assolutamente necessario immagazzinare e trasportare i prodotti a una temperatura di -20°C all’interno di una catena del freddo efficace così da evitare che gli alimenti ricomincino a deteriorarsi.
