All the ingredients
- 500 g d’aucy white beans
- 200 g d’aucy spinach
- 1 onion
- 1 clove of garlic
- 4 mushrooms
- 3 tomatoes
- 40 cl vegetable stock
- 4 eggs
- Olive oil
- Salt and pepper to taste
The preparation stages
- Sauté the chopped onion and minced garlic over medium heat in olive oil for 2 min. Add the mushrooms. Cook for 5 min. Add the chopped tomatoes and vegetable stock. Add salt and pepper. Bring to a boil.
- Stir and cook until thick. Add the d’aucy white beans and spinach. Cook for 2 min. Remove from the heat and keep warm.
- Cook the fried eggs. Spread the mixture in soup plates with the egg. Add salt and pepper.
