All the ingredients
- 265 g d’aucy mixed vegetables
- 140 g d’aucy sweetcorn
- 1 onion
- 300 g ground beef
- 1 pinch of chilli pepper
- 2 tablespoons of tomato concentrate
- 25 cl chicken stock
- 1/2 teaspoon of baking powder
- Bouquet garni
- Salt and pepper to taste
The preparation stages
- Sauté the chopped onion in olive oil over low heat for 5 min. Add the ground beef, the pinch of chilli pepper and the bouquet garni and sauté for 5 min.
- Dissolve the tomato concentrate in the chicken stock. Pour onto the beef. Add the d’aucy sweetcorn and mixed vegetables. Reduce over low heat for 15 min. Add salt and pepper.
- Roll out the shortcrust pastry and spread thinly. Cut circles 15 cm in diameter. Place a spoonful of beef and vegetables in the centre and fold to form the empanadas. Pinch to seal shut. Brush with glaze. Make a small hole in the top of each one and bake at 200° for 15 to 20 min.
