All the ingredients
- d’aucy red kidney beans 250g
- precooked quinoa 250g
- cherry tomatoes 12pc
- red onion 0.5 pc
- sprigs of parsley 40g
- Squash seeds QS
- olive oil 2 tbsp
- walnut vinegar 2 tbsp
- mustard 1 tbsp
- Salt QS
- pepper QS
The preparation stages
- Drain the d’aucy red kidney beans and set aside. Cut the onion into thin strips and the tomatoes in half.
- Place the precooked quinoa, onion, tomato and drained kidney beans in a bowl. Add the chopped parsley and mix together.
- Prepare the vinaigrette in a small bowl : mix the vinegar with the mustard and add the olive oil in two batches. Add salt and pepper and serve the dressing at the last minute to prevent the salad from cooking.
- Sprinkle with seeds for added crunch !
- Serve chilled.
