- 600 غ طماطم مقشرة من d’aucy (علبة 4/4)
- 1 عجينة تارت
- 20 سنتيلتر حليب
- 20 سنتيلتر قشدة "فلوريت"
- 4 بيض
- 200 غ جبن ماعز
- ملح، فلفل، جوزة الطيب، أوريغانو
- زبدة، زيت زيتون
- 100 غ خردل
- 1 قرع
- 1 فليفلة خضراء وحمراء صغيرة
مراحل الإعداد
- في وعاء، يُكسر البيض ويُخفق بالمخفقة قبل إضافة الحليب والقشدة، ويُضاف الملح، والفلفل، ورشة من جوزة الطيب والأوريجانو
- تُبسط العجينة في قالب تارت مدهون مسبقاً بالزبدة وتُوخز.
- تُفرم الفليفلة والقرع فرماً ناعماً إلى حلقات. في مقلاة، يتم تحمير الخضار بزيت الزيتون إلى أن تُطهى جزئيا، ويُضاف الملح، والفلفل.
- تُصفّى الطماطم وتُقطّع إلى حلقات رفيعة
- بعد وضع طبقة رقيقة من الخردل، توضع الطماطم على شكل وردة في أسفل الكيش ثم الخضار الأخرى
- توضع طبقة من خليط الكيش بالتساوي ثم توضع أخيراً شرائح جبن الماعز على كامل الوجه
- تُخبز في فرن مسخن مسبقاً لمدة 45 دقيقة على درجة حرارة 180 درجة مئوية
